Candy and Dessert

1. Hard candy, gel candy, chewing gum

Essence can make up for the loss of flavor caused by high-temperature processing, and give candy a variety of flavors (such as fruit and milk flavor). The added amount is generally 0.1% -0.3%, and the gum based sugar (chewing gum) needs to be increased to 0.5% -0.8%.

Oil soluble or emulsified essence is used for baking food (such as cookies and cakes), and its high temperature resistance is suitable for baking process (below 120 ) .

The addition temperature should be controlled to be 70 to avoid aroma volatilization.

Emulsified essence can enhance the aroma of milk fat, adapt to low temperature environment, and avoid layering or odor generation.

1. Frozen processed foods, cooked meat products

Meat flavor essence (pig, cattle, chicken, etc.) can mask the fishy smell of raw materials, improve the level of meat flavor, and add it to the pickling liquid or seasoning.

Maillard reaction products combine with essence to enhance the natural flavor of meat products.

2. Instant noodle seasoning pack, puffed food

High temperature resistant oil soluble essence is used in seasoning powder, with the addition amount of 0.3% -0.8%, covering the bad flavor in processing.

 

Dairy products and alcoholic beverages

1. Yogurt and dairy beverages

The milk essence should be coordinated with the sour and sweet taste to strengthen the frankincense, so as to avoid covering the fermentation flavor.

2. Liquor, fruit wine

Essence corrects the rough and spicy, bitter and astringent taste of liquor to highlight specific fruit flavor or liquor flavor, and the addition amount must strictly comply with GB 2760 standard.
